Kerem Ben Zimra Series

The Kerem Ben Zimra series consists of a high quality aroma and offers a unique combination of tastes. Grown along the slopes of the vineyard’s special plateau and harvested during the early morning hours, these wines are aged in French and American oak barrels for 12-14 months, followed by an additional five months after bottling. The wines incorporate a distinct variety grown in our region, and benefit from the unique regional climatic conditions and selective production process which has become an inherent characteristics of Adir Winery. Kerem Ben Zimra wines are easy to drink and offer a highly pleasurable experience. The wines combine a blend of tastes to produce a light and enjoyable flavor, suitable for many occasions.

Winemaker edition

The “a” series is a blend of red and white wines made with a special blend of grapes, each grown and harvested along the slopes of the vineyard’s unique plateau. To create the perfect balance, each variety is planted and harvested at individual times, adhering to the specific attributes and requirements of every type of grape. The “a” series is created annually by Adir Winery’s expert wine maker, taking advantage of the season’s harvest to create the perfect blend. This individualistic approach ensures that the distinct taste of “a” is achieved, serving as a select wine created exclusively at Adir Winery.

 

Manually harvested, the clusters are always hand selected, ensuring that only the highest quality grapes are chosen and incorporated into the wines. Following harvest, the grapes then undergo light pressing and non-extraction to maintain the free run of the juice. The next stage is the fermentation and soaking of the peels, using a special yeast solution for slow and cold fermentation. Full fruit extraction and its maximum potential are achieved, combined with the optimal alcohol content which enhances the fruit taste.

 

These unique blends have a rich bouquet of tastes, and can be enjoyed on its own or alongside a meal. It presents a wide variety of seasonings to the palate, and easily complements food without overburdening. “a” is a signature Adir wine, uniquely produced and savored by all, all year round.

Wines from the Series
Plot 98

This series of wine has a unique growth method, stemming from grapes in a late hand harvest. When the grapes come to the winery, the cluster is carefully selected, the seed is separated from the stalk and a partial fermentation is performed until the desired existing level of the fermentation process. Full soakage of the skins combined with a unique yeast brings the desired color. Proper extraction of the fruit with a combination of high alcohol with the wine fruit is aged in oak barrels for a period of 30-36 months outside the winery when the temperature in the barrel can reach 45 degrees in the summer and close to zero degrees in the winter.

Our Flagship Wine
Plato

Plato is the flagship wine of the winery. Produced solely in the years when the harvest reaches the utmost standards of excellence, grapes intended for this exceptional series undergo a stringent process of selection and production. Following harvest, clusters are hand selected to ensure that only the highest quality ones are chosen. After crushing, a 72-hour cold soaking and fermentation, the wine is then placed in French oak barrels where it is aged for 24 months.

 

These wines undergo an additional eight month aging period in bottles. The Plato series has received prestigious awards and international recognition. Plato tastes are sophisticated and multifaceted. It is a very robust wine, incorporating a perfect balance between a wide range of aromas and flavors.

 

The shades range from red to purple, dark blue and opaque. The wine has a rich bouquet with red and black fruits, slightly sour, certain minerals, black plum, red raspberry, new wood, mocha and coffee and firm tannins. The concentration of fruit combined with the sharp tannins from the wood and alcohol percentage promises a fitting return to the patient collectors.
